Carbohydrates are the easiest form of calorie to convert (except things that require fermentation like grasses and other “roughage”, we do not have the means of fermenting food the way ruminants, horses, etc. do). Some carbs are easier than others but they’re all (starch, sugar, fiber) converted in the exact same way and result in glucose
(food -> dextrin/maltose -> lactase/sucrase/maltase -> monosaccharides -> glycogen -> glucose)

This form of energy is not long lasting, your body can only store glucose in one way, fat. All the energy goes into your blood stream and whatever isn’t consumed is then converted into fat reserves.
